Cod Carpaccio, an ideal dish for Easter but also for the rest of the year. Without a doubt, it is a very easy and quick recipe to prepare, which can be served as a starter or as a snack accompanied by toast. Likewise, cod Carpaccio can be served with tomato, for example, or with orange. And, of course, you can also make good vinaigrette to accompany this dish. One of the advantages of Carpaccio is that it can be prepared in advance, so if you have guests you can have it ready the day before and keep it in the fridge.

Ingredients to make Cod Carpaccio:
- 2 pieces of salted cod
- 1 jar of olives
- 1 splash of olive oil
- 1 clove garlic
- 1 handful of parsley
How to make cod Carpaccio:
- We prepare the ingredients in advance. To do this, we wrap the salted cod fillets in plastic wrap and leave them in the freezer for a while, long enough for them to harden but without becoming too frozen.
- Tip: if the cod is salty, it must be desalted two or three days before, putting the fish in water and changing the water four times a day.
- Take the cod fillets out of the freezer and cut the fillets as thin as possible. And if you already had the frozen fish from before, to make the frozen cod Carpaccio we recommend letting it thaw a bit to be able to cut the fillets better.
- Chop the garlic and parsley with a little olive oil. I grind it a bit so that there is a finer and more homogeneous sauce, but this is to everyone’s taste.
- We place the fish fillets covering the entire base of a plate or a dish in order to start serving the cod Carpaccio.
- Season with minced garlic and parsley and a good splash of olive oil. We accompany the dish with some olives, which can be green or black. And ready to eat! As we have already mentioned, the cod Carpaccio recipe is very, very simple and quick to make. The only difficulty lies in cutting the fish very thin and desalting it if we have not been able to buy it that way.

Vinaigrette for cod Carpaccio

For example, we can choose to prepare a recipe for cod Carpaccio with olive paste, very easy to make and really delicious. Please note:
- Take a jar of black olives and remove the bone from all of them.
- Finely chop the olives and/or mash them with a little chopped parsley or oregano and a good splash of olive oil.
- If you prefer, you can crush the mixture so that it is a smoother olive paste with fewer lumps.
- Serve the olive paste over the cod Carpaccio.
Another way to serve this dish is with simple vinaigrette. As it is a fish with such an intense flavor like cod, we recommend opting for orange vinaigrette, which combines perfectly with the base product. Here is the step by step:
- Squeeze the juice of one orange and half a lemon. Lemon juice can be perfectly substituted for vinegar.
- Add two tablespoons of mustard and mix.
- Add pepper, salt and olive oil to taste, mix and serve over the Carpaccio.
