Cod and potato croquettes recipe

Ingredients to make cod and potato croquettes:

  • 800 grams of desalted cod
  • 500 grams of peeled potatoes
  • 150 grams of Butter
  • 1 pinch of salt and pepper
  • 1 pinch of Nutmeg
  • 80 grams of flour
  • 1 unit of beaten egg
  • 50 grams of breadcrumbs
  • 5 tablespoons of oil
  • 1 tablespoon of chopped parsley
  • 3 units of Egg

How to make cod and potato croquettes:

The first step to prepare these cod and potato croquettes will be to cook the potatoes in salted water starting cold that is, not waiting for the water to boil but putting the potatoes covered with cold water and salt directly in a pot and turning up the heat to the max. Once cooked, drain and pass through a potato masher until a smooth texture is obtained, as if it were mashed potatoes. Next, add the eggs, butter and parsley and mix everything well until all the ingredients are integrated. Season with a little salt and pepper to taste. To finish the dough for the homemade cod croquettes, add the fish and knead until it is evenly distributed.
