Cod a la llauna recipe

Ingredients to make Cod a la llauna:

  • 3 salted cod fillets
  • 2 garlic cloves
  • 7 grams of sweet paprika
  • 200 milliliters of extra virgin olive oil
  • 4 tablespoons of flour
  • ½ glass of white wine
  • 1 pinch of Parsley
  • 1 pinch of salt

How to make Cod a la llauna:

  1. We prepare the ingredients for this code recipe. We have already acquired the desalted fish. The parsley should preferably be fresh, but if you don’t have it you can prepare the dish with chopped parsley. The main thing is garlic and sweet paprika.
  2. Firstly, flour the cod fillets on a plate, and then proceed to fry them in a pan with very hot oil.
  3. Tip: Preheat the oven to 190 degrees.
  4. Once we have the cod lightly fried, we arrange the fillets in a casserole for the oven. Ideally, it should be made of tin (“llauna” in Catalan, hence the name of the recipe), but in the absence of it you can use a clay one, for example.
  5. Next we prepare the brother that will season the cod. In the same pan or pot where we made the cod, using the same oil, add a clove of garlic. When it has taken on color, add the white wine and sweet paprika, and let it fry for a few minutes. Then we turn off the heat and pour this brother over the cod.
  6. Add a little parsley, a pinch of salt and bake the cod a la llauna at 190 degrees for about 10 minutes.
  7. We take the cod out of the oven and we have it ready to serve.
  8. We plate the cod recipe, sprinkling a little more parsley on top and the other clove of minced garlic, and it is ready to taste.
