Mochi is the favorite Japanese dessert for many and is currently made in many flavor varieties. It is a rice dessert that can be filled or flavored with different fruits, even in some places they choose to fill it with ice cream. On the other hand, the rice flour that is used is called glutinous, since when preparing it takes on a very special texture. This type of flour can be found in specialized Japanese stores or, if you can’t find it, you can prepare this recipe with normal rice flour, the result is very similar.

Ingredients to make Coconut Mochis:
- For the mass
- 200 grams of glutinous rice flour
- 3 tablespoons of icing sugar
- 220 milliliters of milk or coconut water
- 1 pinch of salt
- ½ cup of corn starch (62½ grams)
- For the filling
- ½ cup of grated coconut (50 grams)
- 2 tablespoons of corn starch
- 1 cup coconut milk
- ½ cup of condensed milk (120 grams)
How to make Coconut Mochis:
- To start with the coconut mochi recipe, first heat the coconut milk and condensed milkin a pot.
- Before it starts to boil, add the grated coconut and the corn starch. Then, stir to integrate everything until the mixture thickens. Next, remove from the heat and reserve.
- When it has cooled, form balls of about 3 cm and refrigerate while you continue with the recipe
- To make the dough for the coconut ice cream mochis, in a container mix the coconut milk, a pinch of salt and sugar until all the ingredients are completely dissolved.
- Empty the mixture into a container and mix with the rice flour until everything is well integrated.
- Cover with plastic wrap and poke a few holes in the plastic. Then, take to the microwave oven for 2 minutes. After 2 minutes, mix with a spatula and put it back in the microwave for 2 more minutes.
- You will notice that a kind of dough was made. Well, then continue moving vigorously with a spatula to give it more texture.
- Then, move to a surface, spread out, and sprinkle a little more cornstarch.
- Take portions of about 40 grams, extend and fill with the coconut balls that you prepared. Next, wrap as a bun, press and repeat the process until you finish with the dough.
- Refrigerate for a couple of hours or so, or even more. If it stays longer in the refrigerator, the more consistency it will take. The delicious coconut mochis are ready!
