Coconut Lassi

Ingredients to make Coconut Lassi:

  1. 1 liter of natural yogurt
  2. 500 milliliters of coconut milk (or a whole coconut)
  3. 1 bunch of fresh mint (to taste)
  4. 1 lemon (juice)
  5. 1 pinch of salt
  6. ½ dessert spoon of cinnamon
  7. ½ dessert spoon of cloves
  8. 1 pinch of cardamom (optional and to taste)
  9. ½ bay leaf (optional and to taste)
  10. 1 tablespoon honey (optional and to taste)

How to make Coconut Lassi:

  • Prepare your work table with all the ingredients and utensils necessary to prepare this exquisite coconut lassi. You can make your own coconut milk at home, if you prefer.
  • Tip: Bay leaf, spearmint and mint (among others) are added to Indian drinks to soften spicy flavors and improve digestion.
  • Put all the ingredients in a blender and blend until you get a smooth coconut milkshake. Remember to place a strainer when squeezing the lemon. If after blending you notice a consistency that is too thick, you can add a little water, to taste.
  • The bay leaf and cardamom are original ingredients in the coconut lassie recipe but if they seem very strong flavors to you, you can omit them, the taste will still be magnificent! On the other hand, I suggest honey to sweeten, if you like sweet drinks.
  • Tip: If you want to give it your own touch, you can grate the rind of a lemon and sprinkle it when serving.
