Ingredients to make Coconut Horchata:
- ½ cup of rice
- 2 cups shredded coconut or fresh coconut pieces
- 1 cinnamon stick
- 1 tablespoon vanilla essence
- 300 milliliters of evaporated milk
- Sugar to taste or condensed milk
- 1 liter of water
- Ice (amount needed)
- Powdered cinnamon to decorate
How to make Coconut Horchata:
- To start the coconut horchata recipe, place the rice and the cinnamon stick in a container, add 1 and a half cups of water and leave it to soak for a minimum of 3 hours. You can also do this step the night before to leave the rice in water overnight.
- Tip: if you don’t have much time, you can cook the rice with the water for 5 minutes. Once the cooking time has passed, let it cool before continuing with the recipe.
- When the rice is already hydrated, proceed to blend it with the grated coconut, 1 teaspoon of vanilla essence, evaporated milk and sugar to taste. - If you can’t easily find shredded or fresh coconut, you can use coconut cream, which is easy to find in the supermarket. Similarly, you can substitute the evaporated milk for coconut milk and make this vegan cocorchata recipe.
- Tip: you can substitute the grated coconut for freshly cut coconut.
- After blending the previous ingredients, empty the mixture into a jug or container passing it through a strainer to remove everything that could not be blended, so you will have a lighter and smoother mixture; press the mixture very well in the strainer to get the most out of the flavors.
- Finally, add 1 liter of water, crushed ice to taste and serve.
