Ingredients to make Breaded Shrimp with Coconut:
- 1 kilogram of fresh shrimp (or prawns or prawns)
- 1 egg
- 1 cup grated fresh coconut
- 2 tablespoons cornstarch or cassava starch

How to make Coconut Breaded Shrimp:
- Start by preparing the shrimp: peel them, leaving only part of the tail, and using a knife, cut the top of the shellfish lengthwise to remove the black strip on top.
- Season them with pepper, salt and ground garlic to taste.
- In a bowl, beat the egg and mix it with the grated coconut, cornstarch and the remaining seasonings.
- Coat the shellfish one by onefirst in the egg and then in the coconut mixture, pressing the batter lightly so that it sticks well.
- Then place the coconut-coated shrimp on a parchment-lined baking tray.
- Trick: You can use grated dried coconut if you don’t have fresh.
- Once they are all battered, drizzle them with a fine thread of olive oil on top to help achieve a crunchy texture.
- Bake them in a preheated oven at 200°C for 10-15 minutesor until golden.
- Tip: If you prefer, instead of baking them you can cook them in plenty of oil but they will be much more caloric.
