Coconut Breaded Shrimp Recipe

Ingredients to make Breaded Shrimp with Coconut:

  • 1 kilogram of fresh shrimp (or prawns or prawns)
  • 1 egg
  • 1 cup grated fresh coconut
  • 2 tablespoons cornstarch or cassava starch
  • 1 tablespoon ground cayenne
  • 1 dessert spoon of black pepper
  • 1 dessert spoon of salt
  • 1 dessert spoon of minced garlic
  • 1 splash of olive oil

How to make Coconut Breaded Shrimp:

  1. Start by preparing the shrimp: peel them, leaving only part of the tail, and using a knife, cut the top of the shellfish lengthwise to remove the black strip on top.
  2. Season them with pepper, salt and ground garlic to taste.
  3. In a bowl, beat the egg and mix it with the grated coconut, cornstarch and the remaining seasonings.
  4. Coat the shellfish one by onefirst in the egg and then in the coconut mixture, pressing the batter lightly so that it sticks well.
  5. Then place the coconut-coated shrimp on a parchment-lined baking tray.
  6. Trick: You can use grated dried coconut if you don’t have fresh.
  7. Once they are all battered, drizzle them with a fine thread of olive oil on top to help achieve a crunchy texture.
  8. Bake them in a preheated oven at 200°C for 10-15 minutesor until golden.
  9. Tip: If you prefer, instead of baking them you can cook them in plenty of oil but they will be much more caloric.
  10. The breaded shrimp with grated coconutare ready! Serve them for example with a sweet and sour tamarind sauce or with a pineapple and coconut chutney, and you will see how well these flavors combine
