COCKLES WITH RICE Recipe

Ingredients to make COCKLES WITH RICE:

  • 1 tablespoon sugar
  • coarse salt
  • 700 g cockles
  • 300 g round grain rice
  • 2 medium onions
  • 1 clove garlic
  • 1 green pepper
  • 2 red tomatoes
  • 100 g ham with bacon
  • 2 bay leaves
  • chopped parsley
  • enough broth (500 ml)
  • a splash of sherry
  • saffron

How to make COCKLES WITH RICE:

  1. Clean the cockles well, washing them several times and leaving them in water with coarse salt for two hours so that they loosen all the earth.
  2. Peel and chop the onion and tomatoes, remove the seeds from the pepper and cut it.
  3. Cut the ham into cubes and put it in a casserole with the chopped onion and garlic clove; add the bay leaf and sauté gently for ten minutes.
  4. Step 2 Add the peppers and tomato and season with a pinch of salt and a pinch of sugar.
  5. Stir with a wooden spoon and leave for five minutes.
  6. Add the well-drained cockles and let them release the water over medium heat, stirring from time to time, water with a splash of sherry.
  7. Step 3 in a saucepan, heat half a liter of vegetable broth, adding chopped parsley.
  8. Wash the rice several times to remove the starch, and drain.
  9. Add to the casserole with the vegetables and stir with a spoon, fry for five minutes.
  10. Water with the hot broth.
  11. Add the saffron threads and cook uncovered over medium heat, until the rice is cooked (the broth will have been consumed but it will be juicy).
  12. Cover with a cloth and let rest for five minutes before serving.
