- ½ kilogram of Tortilla
- 1 cup of vegetable oil

- 1 tablespoon of salt
- 1 kilogram of potato
- 1 piece of onion
- 2 cloves of garlic
- 10 pieces of guajillo chili
- 1 tablespoon of salt

- 3 slices of Tomato
How to make Coastal Enchiladas:
1 The first step to make our Mexican enchiladas will be to wash the potatoes, tomato, onion and chilies. Cook the potatoes with enough water for twenty minutes or until they are soft.
2 Peel and add a tablespoon of salt before mashing the potatoes.
3 We clean, devein and cook the guajillo chilies together with the onion, salt and the garlic clove. Add enough water to cover them, and cook for ten minutes or until the chilies soften.
4 Blend the chilies, strain and pour the sauce into a hot pan with a tablespoon of vegetable oil. We fry.
5 Submerge the corn tortillas one by one in the sauce and transfer to a hot pan with enough oil to fry them lightly.
