Clams with stewed potatoes recipe

Ingredients to make Clams with stewed potatoes:

  • 1 kilogram of Clams
  • 1 kilogram of potatoes
  • 50 grams of toasted almonds
  • 2 onions
  • 1 green pepper
  • 1 tomato
  • 1 liter of Fumet
  • Olive oil
  • Salt
  • 1 small glass of white wine
  • Chopped parsley

How to make Clams with stewed potatoes:

  1. The first step to make these clams with stewed potatoes is to clean the clams well and put them in a pot to cookwith a glass of white wine, so that they get much more flavor.
  2. Once cooked, drain the clams and reserve them for later.
  3. Separately, we peel, wash and cut the onions, green pepper and tomatointo squares and put everything to sauté with a little oil in a hot frying pan.
  4. While the potatoes with clams are being fried, peel and cut the potatoes into large pieces and put them to cook in another pot with the stock to cover.
  5. Then we raise the heat and with the help of a potato mill we put the toasted almonds (previously peeled) in the potatoes.
  6. This will leave the crushed almonds, although if you don’t like to find the pieces, you can crush them even more.
  7. Once the clams and potatoes are well-done, we also pass it through the potato mill and put it in the pot where the potatoes are cooking so that it is very fine.
  8. When the potatoes have about 5 minutes left, add the cooked clamsand let it finish cooking all together so that the flavors are well integrated.
