Ingredients to make Clams with tender beans:
- 750 grams of broad beans
- 2 garlic cloves with skin
- 1 bay leaf
- Water
- 1 unit of onion
- 1 pinch of salt
- 1 pinch of Coloring

- 1 kilogram of Clams
- 2 units of Chili or cayenne
- Olive oil
- 1 pinch of salt

How to make Clams with tender beans:
- The first thing to do is soak the beansthe day before.
- Once we are going to cook them, we put the broad beans, the whole onion, the garlic cloves and the bay leaf in a pot.
- We cover with water and put on high heat, salt to taste.
- Before it starts to boil, a foam comes out that we remove with the help of a slotted spoon.
- When it breaks the boil, we go down to low fire.
- Add the food coloring and let the beans cook, taking care that the beans remain whole.
- In this case, since they were “homemade” beans, despite being dry beans, they took about 40 min. in cooking if they are dry beans that are bought in supermarkets, they take about 1 hour.
- While the beans are cooking we are preparing the clams.
- In a low pot, heat a little olive oil, add the chopped onion and the sliced garlic cloves.
- When they start to brown, add the chilies.
- Once the onion is poached, add a little more than ½ glass of white wine and the bay leaf. Let the wine reduceand add a little coloring and a little sweet paprika.
- Add the clams, salt, cover the pot and let the clams open.
- Once the clams are open, turn off the heat and sprinkle with the chopped parsley.
- Once the beans are cooked and the clams are done, we remove from the pot where we made the beans, the onion, the garlic cloves and the bay leaf.
- Remove the bay leaf from the clams and pour the clams over the beans.

- Heat for a few minutes so that both flavors are well incorporated and serve the clams with tender beansvery hot.
