Clams in almond sauce recipe

Ingredients to make Clams in almond sauce:

  • 1 kilo of clams
  • 200 grams of onion
  • 500 grams of tomato
  • 1 clove garlic
  • a few branches of parsley
  • Salt
  • 1 spoon of sugar
  • 100 grams of toasted almonds
  • 1 glass of white wine
  • 4 tablespoons of olive oil
  • Black pepper

How to make Clams in almond sauce:

  1. We put the clams in a container with water and salt for two hours so that they release the grit they have.
  2. In a low casserole, fry the onion cut into brunoises (finely minced) and the tomato cut into cubes with a little oil, adding a little salt and sugar.
  3. Prepare a cicada by crushing the garlic, parsley and toasted almonds to form a compact mass.
  4. We add this mince to the sauce, together with the glass of white wine and a little pepper.
  5. We wash the clams under a cold water and put them in the saucepan, letting them cook for 10 minutes.
  6. If the sauce came out a little thick, add a little water.
