Ingredients to make Clams in almond sauce:
- 1 kilo of clams
- 200 grams of onion
- 500 grams of tomato
- 1 clove garlic
- a few branches of parsley
- Salt
- 1 spoon of sugar
- 100 grams of toasted almonds
- 1 glass of white wine
- 4 tablespoons of olive oil
- Black pepper
How to make Clams in almond sauce:
- We put the clams in a container with water and salt for two hours so that they release the grit they have.
- In a low casserole, fry the onion cut into brunoises (finely minced) and the tomato cut into cubes with a little oil, adding a little salt and sugar.
- Prepare a cicada by crushing the garlic, parsley and toasted almonds to form a compact mass.
- We add this mince to the sauce, together with the glass of white wine and a little pepper.
- We wash the clams under a cold water and put them in the saucepan, letting them cook for 10 minutes.
- If the sauce came out a little thick, add a little water.
