Ingredients to make Churro Beans:

  • 1 kilogram of beans
  • 1 large Chorizo ​​unit
  • 250 grams of Bacon
  • 250 grams of Ham
  • 500 grams of onion
  • 250 grams of jalapeño pepper (It can be ground together with the tomato and the strawberry tomato)
  • 500 grams of Tomato
  • 200 grams of strawberry tomato
  • 1 bunch of coriander
  • 2 tablespoons Swiss Knorr (or other brand)
  • 2 tablespoons cornstarch
  • 1 head of Garlic
  • 750 grams of Pork Cerritos (they are cooked whole and then cut) or 1 kilo and 1/2 of pork feet
  • 1 unit of large sausage

How to make Churro Beans:

1 In order to prepare the churro beans recipe, the first thing you should do is clean the beans and soak them the night before. The next day, you should cook them with a head of garlic, salt and the pork skins. If you wish, you can substitute the curios for pork feet.

2 To cook the beans you must do it over high heat until the water boils, then lower the temperature to a minimum and cover the pot leaving a small opening. You will have to cook them over low heat until they soften. The cooking time can range from 45 minutes to 1 hour, although if you prefer you can use an express pot.

3 While the beans are cooking you can make the soffit for churro beans. To do this, the first thing we are going to do is fry the bacon. Take a wave pan and add the chorizo, ham and sausage, fry it all.

When they are very dry, that is to say without juice, add the onion previously cut into small squares. It is important that we keep moving it to prevent the onion from sticking and burning.

4 When the onion turns transparent, add the tomatoes, chili and Swiss Knorr, all of them previously blended, and let it all cook.

5 When the beans are cooked, remove the garlic and the skins. Discard the garlic and chop the curios and put them back in the pot with the beans. Subsequently, the previous soffit is added and mixed.

6 To continue with the preparation of the churro beans, in a container dissolve the cornstarch in cold water and add it to the beans. Leave the stew for 15 minutes to boil everything together.
