Ingredients to make Chupe de olluco:

  • 1 kilogram of Olluco chopped
  • 1 kilogram of grated pumpkin
  • 2 units of Choclos (corn)
  • 1 kilogram of peeled green beans
  • 1 kilogram of peeled yellow potato
  • 1 kilogram of chopped fresh cheese
  • 1 cup of evaporated milk
  • 3 branches of Huacatay
  • 1 pinch of salt
  • 1 pinch of pepper

How to make Chupe de olluco:

  1. Bring water to a boil in a large pot. When it breaks the boil, add the chopped olluco, pumpkin and corn. Let cook for 20 minutes.
  2. After this time add the peeled beans and potatoes to the preparation. Cook over low heat until the vegetables are ready.
  3. Once the chupe is ready, rectify the seasoning with salt and pepper to taste. Turn off the heat and add the huacatay, the evaporated milk and the diced cheese.
  4. Serve the hot olluco chupe and enjoy this delicious dish on those cold days to recompose the body and recover energy. And if you like Peruvian cuisine you can try the ceviche or the northern cause.
