Ingredients to make Chupe de Gallina:
- 1 whole chicken with skin
- 2 lemons to wash the hen
- 4 jojotos
- 1 whole onion
- 1 large bell pepper
- 1 whole leek
- coriander sprigs
- 4 large cubed potatoes
- 1 can of creamed corn
- 1 can of sweet corn
- 1 kilo of white cheese in cubes
- 1 cup chilled whipping cream
- Fresh coriander leaves to decorate
How to make Chupe de Gallina:
- Wash the hen by rubbing it with lemon. Place it with the jojotos, onion, paprika, leek and cilantro in a large pot and add enough water to cover all the ingredients.
- Simmer over medium heat for 2 1/2 to 3 hours or until chicken is tender.
- Take the chicken out, let it cool and cut it into cubes. Defat the consommé, strain it and transfer it back to the pot with the jojotos.
- Add the cubed potatoes to the broth and cook for 5 minutes
- Add the creamed corn and sweet corn. Add the chicken and cubed cheese. Let cook for a few minutes without letting it boil.
- Remove the pot from the heat and add the whipping cream. Decorate with coriander leaves.
