Chupe de Gallina Recipe

Ingredients to make Chupe de Gallina:

  • 1 whole chicken with skin
  • 2 lemons to wash the hen
  • 4 jojotos
  • 1 whole onion
  • 1 large bell pepper
  • 1 whole leek
  • coriander sprigs
  • 4 large cubed potatoes
  • 1 can of creamed corn
  • 1 can of sweet corn
  • 1 kilo of white cheese in cubes
  • 1 cup chilled whipping cream
  • Fresh coriander leaves to decorate

How to make Chupe de Gallina:

  1. Wash the hen by rubbing it with lemon. Place it with the jojotos, onion, paprika, leek and cilantro in a large pot and add enough water to cover all the ingredients.
  2. Simmer over medium heat for 2 1/2 to 3 hours or until chicken is tender.
  3. Take the chicken out, let it cool and cut it into cubes. Defat the consommé, strain it and transfer it back to the pot with the jojotos.
  4. Add the cubed potatoes to the broth and cook for 5 minutes
  5. Add the creamed corn and sweet corn. Add the chicken and cubed cheese. Let cook for a few minutes without letting it boil.
  6. Remove the pot from the heat and add the whipping cream. Decorate with coriander leaves.
