Christmas Romeritos Recipe

With the arrival of Christmas we welcome endless Christmas recipes that we usually prepare as a family to enjoy at dinner. Several of the most popular recipes in Mexico include romeritos as the main ingredient, since this is the season in which they are usually found.

In this article we share with you the recipe for traditional Christmas rosemary, explained step by step so you can see how easy and practical it is. Ingredients to make Christmas Romeritos:

  1.  500 grams of rosemary
  2.  5 medium nopales
  3.  3 boiled potatoes, diced
  4.  250 grams of pasta for mole poblano
  5.  150 grams of dried shrimp
  6.  1 cup of breadcrumbs
  7.  2 eggs
  8.  1 pinch of salt to taste
  9.  3 tablespoons of oil

How to make Christmas Romeritos:

  • To start with the Christmas rosemary recipe, clean the leaves well. Then, cook the romeritos with a pinch of salt and enough water for 20 minutes or until the stem becomes very soft. Let rest and reserve.
  • Chop the nopales into 3 mm by 3 mm squares and cook them in 3 cups of water with salt to taste for 15 minutes, then remove them from the water and reserve them.
  • For the shrimp pancakes, clean the dried shrimp by removing the eyes and whiskers, then toast them in a pan for 5 minutes and stir constantly to prevent them from burning, since if they burn they can make the pancake bitter.
  • When they are toasted, put them in a food processor or blender to pulverize them.
  • Whip the egg whites and when you get to the point of snow add the yolks and beat again. Then, add the cup of ground bread and the shrimp that you pulverized and mix until you get a paste.
  • Heat 3 tablespoons of oil in a frying pan, form small balls and press them to form pancakes. Once ready, fry them on both sides until lightly golden.
  • Tip: make them small, as they will double in size when cooked with the mole.

  • When you have your mole poblano, add the cooked nopal, the romeritos and the cooked and diced potato.

  • Finally, add the shrimp pancakes, mix and let cook for 5 minutes so that the flavors are integrated.
