Chorizo ​​Recipe with Spicy Potatoes

Ingredients to make Chorizo ​​with spicy potatoes:

  1. 1/2 kilo of chorizo, preferably fresh
  2. 3 large potatoes (potatoes) in cubes
  3. 1 bay leaf
  4. 2 large tomatoes (or a tin or box of ground tomatoes)
  5. 1/4 onion
  6. 1 garlic
  7. 1 cuaresmeno chile or 2 green serranos
  8. 2 tablespoons of oil or butter
  9. 1 chicken broth cube
  10. Salt
  11. pepper to taste

How to make Chorizo ​​with spicy potatoes:

  • Cut the chorizo ​​into slices and fry in the pan for 5 minutes over medium heat, stirring constantly
  • Blend the tomato, onion, chili and garlic with a cup of water.
  • Strain and add to the pan along with the chicken stock cube, add the bay leaf and a pinch of pepper and the potatoes.
  • As soon as it comes to a boil, lower the heat to a simmer and let it cook for 10 minutes or until the potato cubes are cooked.
  • It can be left dry or with broth, according to taste.
  • Serve with white rice and guacamole, accompanied by tortillas or toast.
  • Or it can also be used to prepare quesadillas, tacos or Mexican pambazos.
