Ingredients to make Chorizo with spicy potatoes:
- 1/2 kilo of chorizo, preferably fresh
- 3 large potatoes (potatoes) in cubes
- 1 bay leaf
- 2 large tomatoes (or a tin or box of ground tomatoes)
- 1/4 onion
- 1 garlic
- 1 cuaresmeno chile or 2 green serranos
- 2 tablespoons of oil or butter
- 1 chicken broth cube
- Salt
- pepper to taste

How to make Chorizo with spicy potatoes:
- Cut the chorizo into slices and fry in the pan for 5 minutes over medium heat, stirring constantly
- Blend the tomato, onion, chili and garlic with a cup of water.
- Strain and add to the pan along with the chicken stock cube, add the bay leaf and a pinch of pepper and the potatoes.
- As soon as it comes to a boil, lower the heat to a simmer and let it cook for 10 minutes or until the potato cubes are cooked.
- It can be left dry or with broth, according to taste.
- Serve with white rice and guacamole, accompanied by tortillas or toast.
- Or it can also be used to prepare quesadillas, tacos or Mexican pambazos.
