Chorizo Croquettes Recipe

• 150 grams of sweet or spicy chorizo

• 50 grams of butter

• 50 grams of flour

• 500 milliliters of milk

• 1 pinch of salt

• 2 eggs

• 1 package of breadcrumbs

• 1 glass of oil for frying

How to make chorizo croquettes:

In a large skillet, heat the butter over medium heat until melted. Remove the skin from the chorizo and chop it into small pieces. You can use sweet or spicy chorizo, or mix both. Add them to the pan, stir and let cook for 1 minute. Add the flour, stirring with a wooden spoon until it’s all mixed in and cooked a bit.

Heat the milk, watch adding little by little to the mixture and stirring so that it forms a mass that is like a thick cream.

It will be ready when there is a dough that detaches from the pan, taste the dough and, if necessary, add a little salt. It will take little, since the chorizo gives a lot of flavor. Once the mass of the chorizo croquettes is ready, turn off the heat. Put the dough in a bowl and let it cool. When it is cold, cover it with plastic wrap and put it in the fridge for 3-4 hours so that it takes on more flavor. You can also leave it overnight.

On one plate put the beaten eggs, on another the breadcrumbs. Take the dough out of the fridge and form the homemade croquettes. Pass them first through the egg and then through the breadcrumbs.

Heat a pan with plenty of oil and add the croquettes in batches, fry them and brown them on all sides. Put a plate with a kitchen paper.
