Chocolate sponge cake recipe with couverture

Ingredients to make Chocolate cake with couverture:

  • 180 Grams dark chocolate 70%.
  • 185 Grams of icing sugar.
  • 160 grams of butter.
  • 7 medium eggs.
  • 100 Grams of chopped almonds.
  • 90 Grams of flour.

How to make Chocolate cake with couverture:

  1. We melted the chocolate in a bain-marie.
  2. We take in any bowl or container and with a mixer we beat the butter together with the icing sugar.
  3. Add the melted chocolate.
  4. Next the chopped almonds.
  5. Now we are incorporating the egg yolks one by one, it is important not to stop beating at any time.
  6. Mix the flour with the yeast, add it to the cream by passing it through a sieve.
  7. Then we add the egg whites gently and gradually.
  8. Next, we must grease a mold, preferably one that is removable, with butter and sprinkle it with flour. We pour the mixture; we put it in the preheated oven at 180 degrees for 10 min. Once this temperature is reached, we wait another 30 seconds and we return to lower the temperature, now to 160 degrees and bake for 30 more minutes.
  9. When finished, let it cool a bit and remove it from the mold.
  10. We decorate and serve.
