Ingredients to make Chocolate Grouper:
- 1250 gr. sliced grouper
- 1 kg of ripe tomatoes
- 2 large onions
- 1 ounce of grated dark chocolate or the equivalent of 30 gr. powdered chocolate
- a glass of brandy
- oil
- flower
- sugar
- bread
- salted
How to make Chocolate Grouper:
- 1º Season the grouper slices with salt and pepper and flour.
- Fry them leaving them little done inside.
- Then, transfer them to a low clay pot and reserve them.
- 2º Strain the oil well where the grouper has been fried and sauté the onion cut into very thin slices over low heat.
- When the onion is well browned, add the tomato, peeled and also cut into thin slices.
- Let it cook in the pan over low heat with a glass of water, salt, pepper, a pinch of sugar and brandy for half an hour.
- 3º Pour the sauce over the grouper slices, sprinkle the chocolate on top and boil it for 5 minutes.
- 4º Serve it immediately.
- Take it out to the table in the same clay pot, garnishing it with some croutons of fried bread.
