Ingredients to make Chocolate cake with curd:
- For the base:
- 275 grams of cookies
- 100 grams of butter
- For the filling:
- 250 grams of dark chocolate for desserts
- 1 liter of whole milk
- 2 envelopes of curd
- 50 grams of sugar (¼ cup)
How to make Chocolate Curd Cake:
- Chop or grate the chocolate and reserve.
- Tip: You could also chop it into larger pieces, but it will melt much faster this way.
- From the liter of milk that you will use to make the recipe, remove a part and add it to the two sachets of curd powder. Dissolve the curd well until there are no lumps.
- Put the rest of the milk in a saucepan, along with the sugar, and heat. To make this chocolate cake with curd it is not necessary for the milk to boil.
- When the milk is hot, add the chopped chocolate and stir with a whisk until completely melted.
- Add the curd envelopes dissolved in the milk that you had reserved and stir from time to time until the preparation boils.
- At the end of cooking you will have to stir more often so that the preparation does not stick to the bottom of the saucepan and the cream remains smooth and without lumps.
- Remove from the heat and let warm. Since it is a cold chocolate cake without an oven, as it cools it will set.
- While the cream cools a bit, you can prepare the base of the cake. To do this, crush the cookies, either with a food processor or put inside a bag, passing a rolling pin over them until they turn into powder.
- Melt the butter in the microwave and mix it with the cookie powder to form a paste.
- We used oatmeal chocolate chip cookies to make the base, but you can use any other type of cookie.
- Grease a removable mold of about 22 cm in diameter with a little butter, soft oil or with a release spray and add the biscuit base. Distribute the cookie dough well and flatten with your hands.
- Pour the chocolate cream with curd and let it cool. When it is totally cold, cover it with plastic wrap and keep it in the fridge for 6 hours or, better, overnight.
- Tip: To speed up the process and get the chocolate curd cake faster, keep it in the freezer.
- To unmold, carefully run a sharp knife around the edges and carefully unmold it. To decorate, you can use crocanti, as we have done on this occasion.
- If you don’t have one, you can crumble one or two cookies and spread them on top just before serving. A very simple way to decorate this amazing curd and biscuit cake and delicious.
- Reserve the leftover cake in the fridge and consume it within a maximum period of three or four days.
