Chocolate and walnut cake recipe

Ingredients to make Chocolate and walnut cake:

  • 200 grams of cornstarch
  • 2 teaspoons of baking powder
  • 1 glass of sugar
  • 1 small glass of olive oil
  • 1 plain yogurt
  • 2 eggs
  • 6 tablespoons of cocoa powder
  • 200 grams of nuts

How to make Chocolate and walnut cake:

  1. Separate the egg whites from the yolks to start preparing the chocolate and walnut cake. Although this step is not mandatory, it is recommended because it helps us to make the cake fluffier. Besides, preheat the oven to 200ºC with heat up and down.
  2. Beat the egg yolks with the sugar until both ingredients are fully integrated. We have chosen to make the cake with white sugar; however, to make it healthier you can use brown sugar, reducing the amount by half.

  5. Add the sifted cornstarch with the baking powder and integrate with soft and enveloping movements. By using this type of flour we get a gluten-free chocolate and walnut sponge cake, however, it can also be prepared with wheat flour without any problem.
  6. Besides, beat the egg whites until stiff. This is one of the tricks that will allow us to obtain a sponge chocolate cake, since it allows us to introduce a lot of air into the dough.
  7. Add the beaten egg whites to the mixture and integrate them carefully so that they do not lose their volume.
  8. Finally, add the chopped walnuts to the dough and distribute them well. Another totally valid option is to distribute the amount of nuts between this dried fruit, hazelnuts and almonds, so it will be a much tastier cake.
  9. Grease the mold, pour the mixture and bake the chocolate and walnut sponge cake at 180ºC, with heat only below, for 30 minutes. After this time, also activate the heat above and let it bake for 10 more minutes. The total baking time will be approximately 40 minutes, although we recommend doing the toothpick test to verify this.
  10. And ready! Let it cool down a bit, unmold it and place the cake on a wire rack so that it can finish cooling, since that way it won’t be damp on the bottom. This is a very simple and delicious chocolate and walnut sponge cake recipe, ideal for breakfast or as a snack.

Yogurt cake with chocolate and walnuts – Tricks to make it fluffier

Throughout the recipe we have shared some tips for preparing a healthy chocolate and walnut sponge cake, but now we are going to show you some tricks to make it more fluffy and juicy:

  • The fact of beating the whites separately already helps us to aerate the dough and make it foam better in the oven, so this is the first trick that we must keep in mind.
  • Preheating the oven is another key. Although it may seem like an unimportant step, the truth is that it is one of the most important, since if we bake the cake without having heated it before hand, it will take longer to cook and it may even be raw inside.
  • Sifting dry ingredients, such as flour and cocoa powder, is a must to introduce more air into the dough. If we leave the lumps, these will make the dough not sponge. In fact, when eating the chocolate and walnut cake we will notice those lumps of flour that have not been integrated into the dough.
