Chocolate Alfajores Recipe

Ingredients to make Chocolate Alfajores:

  1. 1 cup of flour (140 grams)
  2. 1 cup of corn starch (125 grams)
  3. 90 grams of Butter
  4. ½ cup of icing sugar (70 grams)
  5. 1 piece of egg yolk
  6. 1 piece of Egg
  7. ¼ teaspoon bicarbonate of soda
  8. ½ teaspoon Baking Powder
  9. ½ teaspoon lemon zest
  10. 1 tablespoon of Vanilla
  11. 300 grams of milk chocolate
  12. 30 grams of Butter
  13. 2 tablespoons of whole milk
  14. 100 grams of white chocolate

How to make Chocolate Alfajores:

  • The first step to prepare the gourmet chocolate alfajores is to cream the butter together with the icing sugar and bicarbonate. Add the yolk and the whole egg, mix very well.
  • Trick: To cream the butter, it must be at room temperature.
  • Add the flour, corn starch, and baking powder, vanilla and lemon zest. Mix until well integrated and finish kneading with your hands.
  • Wrap the dough in plastic wrap and refrigerate for 30 minutes. After that time, take the dough out of the refrigerator and spread it out on a floured, smooth and clean surface.
  • Prepare a baking sheet with butter and flour. Cut circles 5 cm in diameter and transfer the cookies to the tray. Repeat this process until all the dough is finished.
  • Trick: Gather all the leftovers of the dough and spread them out to form more alfajores
  • Bake at 160ºCfor approximately 10 minutes. The alfajores will be ready when you touch them and they feel firm. Remember that the baking time will depend on your oven.
  • Trick: Turn on the oven 15 minutes before putting the alfajores.
  • In a skillet over very low heat, melt the chocolate, milk, and butter, stirring constantly to prevent the chocolate from burning.
  • Tip: You can use dark or white chocolate instead of milk chocolate.
  • Wait for the chocolate to harden a bit and fill the alfajores.
  • Place one cookie on top of another with chocolate, to form a “sandwich.”
  • Besides, finely chop the white chocolate.
  • Decorate the alfajores with white chocolate or grated coconut if you prefer.
  • Finally, place some of the chocolate that we used to fill the alfajores in a pastry bag with a fine nozzle or in a paper cone and paint lines on the alfajores.
  • Tip: If the chocolate has hardened, melt it a little over the heat, and if it is too thick to paint stripes you can lighten it with a little oil.
  • Wait for the chocolate to cool down and enjoy the homemade chocolate alfajores in the company of your whole family.
