How to make Chinese Noodles with Shrimp:
- Rehydrate the noodles for 15 minutes in cold water, drain well
- Peel the carrots and cut them into very thin slices and then cut them into 2-3 mm julienne strips.
- Peel the mango and cut its meat into 1 cm cubes.
- I recommend (following the advice of Father Paciano and Guillermo) the frozen peas from Findus… Defrost them.
- Finely chop the garlic clove.
- Heat the oil in a high-sided skillet, add the oil, then julienne the carrots, stir for 2 minutes, add the well-drained noodles, and cook for a further 2 minutes before adding the raw shrimp, bean sprouts and peas.
- Stir well for 1 minute and season with salt, garlic and grated ginger; then we will add the soy sauces and sweet and sour.
- Stir for another minute, add the mango cubes, remove from heat and serve.
