Chinese noodles with prawns and mango recipe

Ingredients to make Chinese noodles with prawns and mango:

  • 100 milliliters of rice vinegar
  • 30 grams of icing sugar
  • ½ teaspoon of Salt
  • 2 garlic cloves crushed
  • ½ chopped red chili
  • 1 tablespoon of sesame oil
  • 1 lime
  • 200 milliliters of olive oil
  • 2 Eggplants
  • 200 grams of soba noodles
  • 1 ripe mango
  • 25 grams of basil leaves
  • 25 grams of Cilantro chopped
  • 1 red onion
  • 12 cooked prawns

How to make Chinese Noodles with Prawns and Mango:

  1. The first thing we do is prepare the dressing, for this we heat a small saucepan over low heat with the vinegar, sugar and salt for one minute, until the sugar dissolves.
  2. Remove from the heat and add the garlic, chili and sesame oil.
  3. Let cool and add the grated skin and the juice of the lime.
  4. Separately, heat the oil in a frying pan and fry the eggplant cubeslittle by little in two or three batches, when they are golden, remove from the heat and place them on absorbent paper to remove excess oil.
  5. We take the opportunity to prepare the rest of the ingredients, also dicing the mango, finely dicing the basil leaves and the onion, into rings.

  7. Strain and rinse under cold tap water.
