Ingredients to make Chinese noodles with offal:
- 1 pound (approximately 2 cups) Chinese noodles
- 1 pound (about 2 cups) chicken giblets
- 1 cube of concentrated chicken broth
- 4 tablespoons of soy sauce
- 1 tablespoon cornstarch
- 2 cups of water
- 5 turnip stalks, julienned
- 2 carrots, julienne cut
- 2 bell peppers, julienned
- 1 onion, julienned
- 1/4 cup sherry
- 3 tablespoons of oil (1 tablespoon for cooking the pasta and 2 tablespoons for refrying)
- 1/4 teaspoon pepper
- salt to taste
How to make Chinese offal noodles:
- In oil, sauté the giblets previously seasoned with salt and pepper, add the water and the cube.
- Correct the seasoning, and then add the sherry and cover
- Then add the soy sauce and cornstarch dissolved in 1 cup of water and cook until thickened, stirring constantly so that lumps do not form.
- In another frying pan, fry the turnips in oil until they crystallize.
- The turnips are removed and placed on top of the noodles that have been previously cooked normally.
- The carrots are cooked and placed on top of the noodles, then the onions and peppers. Finally, the giblets with their sauce are placed on top of the vegetables.
