Chili noodle recipe

In this recipe we bring a typical Bolivian dish which is made with pasta (any type of long or short pasta you want), ground meat, some spices, a basic stir-fry and, as the name says, yellow chili. We are going to see the ingredients and step by step of the recipe for ají de fideo.

Ingredients to make Ají de fideo:

  • 300 grams of ground beef
  • 500 liters of beef broth
  • 1 unit of Carrot
  • 2 units of large red tomatoes
  • 2 units of medium white onion
  • 5 grams of Parsley
  • 250 grams of Spaghetti or other pasta
  • 1 unit of pepper or paprika
  • 1 pinch of thyme
  • 1 pinch of Bay
  • 1 teaspoon of garlic paste
  • 1 pinch of yellow chili
  • 1 pinch of salt

How to make Ají de fideo:

  1. The first step to make our noodle chili recipe is to prepare the ingredients
  2. Chop the onion into medium squares and reserve it.
  3. Chop the red pepper into small squares and reserve them to make the Bolivian recipe’s soffit.
  4. Finally add the tomato in small squares.
  5. To make the base sauce, bring a pan to medium heat and once hot add a little olive or sunflower oil.
  6. Add the three ingredients that we chopped in the previous steps and let them fry.
  7. Add some thyme, bay leaf, and garlic paste to the stir-fry. If you want you can also add a little cumin powder.
  8. Add the meat to one side of the bread and mix with the sauce so that everything is evenly integrated.
  9. Add the beef broth and the grated carrot; this will make the base take on a slightly thicker consistency.
  10. Let it simmer over low heat to concentrate the flavors.
  11. Bring a deep pot with enough water over medium heat.
  12. Once the water is boiling, add the pasta, in this case spaghetti, and cook in the traditional way until they are at the desired cooking point and al dente.
  13. Mix the spaghetti with the base sauce and add a little salt. Add chili to taste depending on how spicy you want the dish.
  14. Serve our hot chili noodle and sprinkle some parsley on top
