Chilean Ajiaco Recipe

Ingredients to make Chilean Ajiaco:

  • 350 grams of roast beef
  • 2 units of white onion
  • 2 tablespoons fresh parsley
  • 4 units of Eggs
  • 1 unit of bell pepper or red paprika
  • 1 liter of meat broth
  • 4 units of Potatoes
  • 1 pinch of garlic paste
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Chilean Ajiaco:

  1. The first step to make the Chilean ajiaco recipe is to pre-list the ingredients.
  2. The first thing we are going to do is the sofrito base of our soup. To do it, take a deep pot over medium heat, add the diced pepper and the onion in small cubes, sauté these ingredients very well.
  3. Add salt, black pepper and garlic paste to taste to flavor our recipe.
  4. Cut the roast beef into strips and add them to the pot where we have the sauce.
  5. Add a little dressing, in this case I added thyme, but you can also add oregano to taste.
  6. Cover the ingredients in the pot with the meat broth.
  7. Add the previously peeled and cut potatoes and leave to keep over medium heat for about 20 minutes.
  8. Once the Chilean ajiaco is ready, fry the eggs one by one so that we can serve as a side dish.
  9. Serve our Chilean ajiaco recipe in clay pots to keep warm.
  10. Add a little parsley on top.
  11. Serve each of the ajiaco chili dishes not with a fried egg on top as seen in the photograph. And to complement the recipe, you can prepare some delicious Chilean empanadas.
