Chifferi recipe with fine herbs

Ingredients to make Chifferi with fine herbs:

  • 350g Chifferi rigati – 33
  • 1 bunch of basil
  • 1 bunch of parsley
  • 1 sprig of rosemary
  • 120g cottage cheese
  • 2 tablespoons of capers in salt
  • salted
  • 3 tablespoons of grated cheese

How to make Chifferi with fine herbs:

  1. Wash the basil, parsley and rosemary; Rinse the capers, dry everything on a kitchen towel, then with a chopping board chops all the ingredients together
  2. Cook the pasta in a pot with plenty of boiling salted water
  3. Meanwhile, in a large frying pan, heat the oil with the chopped aromatic herbs and capers over low heat.
  4.  Crumble the cottage cheese into a tureen and dilute the pasta cooking water with a few tablespoons.
  5. As soon as the pasta is cooked al dente, strain it, transfer it to the pan and sauté so that the flavors blend with each other.
  6. Pour it into a tureen, sprinkle with the sheep cheese and serve immediately.
