Ingredients to make Chickpeas With Shrimps :
- 500g milky chickpeas
- 300g large prawns (can be used frozen)
- 1 large onion
- 2 cloves of garlic
- 1 large carrot
- 5 tablespoons of oil
- 2 bay leaves
- Fresh parsley
- black peppercorns
- Saffron
- Salt
How to make Chickpeas With Shrimps :
1 Soak the chickpeas covered in fresh water for 24 hours.
2 Then strain and throw them in a pot covered with water and salt. Bring to the fire and cook for at least 45 minutes (in a gentle boil).
3 Meanwhile, peel the prawns and reserve the tails; skip the shells with a few peppercorns.
4 A pinch of salt, bay leaf and a tablespoon of oil, stirring with a spoon for ten minutes.
5 Cover with ¿ liter of water and boil over medium heat for 20 minutes.
6 Blend with an electric mixer and pass through chinos, adding the resulting broth to the chickpeas, which will continue to cook until tender (cover the pot). Add the saffron.
7 Prepare a sauce with oil and finely chopped onion; add the pressed garlic and diced carrots.
8 Let sauté over low heat for ten minutes with a pinch of salt and add to the chickpeas.
9 Finally, sauté the prawns in the oil from the sauce with parsley and a pinch of salt. Add to the stew five minutes before the end of cooking. Serve hot and chilled.
