Chickpeas with Shredded Meat Recipe

In this typical Colombian recipe we bring two ingredients that combine very well: shredded meat and chickpeas. We are going to cook meat with a basic onion and tomato stew with beer, finishing off the dish with cooked chickpeas, the flavor is unique. Let’s go to the step by step of the chickpeas with shredded meat.

Ingredients to make Chickpeas with shredded meat:

  • 200 grams of cooked Chickpeas
  • 500 grams of Macabre or sobrebarriga (Cut to disassemble)
  • 5 units of Tomatoes
  • 2 units of white onion
  • 120 grams of long onion
  • 1 dessert spoon of garlic paste
  • 2 cans of beer
  • 1 pinch of thyme
  • 1 pinch of laurel
  • 1 pinch of salt
  • 1 pinch of black pepper

How to make Chickpeas with shredded meat:

1 The first step to make our recipe with shredded meat is to pre-list the ingredients.

2 The first thing will be to make the basic stew to cook the shredded meat. To do this, blend or process the tomatoes together with the onion and place the resulting puree in a pot over medium heat with a little sunflower oil. Let fry for a few minutes.

3 When the stew takes consistency add the piece of meat, previously cut into medium pieces, with a little salt, pepper and garlic to taste. You can add a little coloring and cumin, which will give color and a delicious flavor to the sauce.

4 Next, cover the meat with the beer, the ideal is that the cooking is done only in this liquid medium because it will have a lot of flavor. Add the thyme, bay leaf and cover the pressure cooker so it cooks faster. As a suggestion, I like it to be very soft, so I cook it for an exact hour to obtain a tender, juicy and soft meat.

5 Once this time has elapsed, remove the meat from the broth and let cool. Reserve the cooking broth.

6 Once the meat is cold, you can shred it or shared it with your hands. Begin to crumble it as seen in the photograph.

7 Take the shredded meat back to the broth where we did the previous cooking and leave over medium heat.

8 Add the cooked chickpeas and keep these ingredients over medium heat. Add salt and pepper to taste if you think it’s necessary.

9 Finally, serve the chickpeas with shredded meat accompanied with white rice or some slices of banana. Enjoy!
