Chickpeas with Pine Nuts and leek Recipe

Ingredients to make Chickpeas with pine nuts and leek:

  • For 4 people:
  • 250 grams of chickpeas
  • 1 leek
  • 2 carrots
  • 40 grams of pine nuts
  • 4 tablespoons olive oil
  • Salt

How to make Chickpeas with Pine Nuts and Leek:

1 The chickpeas left to soak the day before, we cook them with clean boiling water with a pinch of salt (we throw away the soaking water and wash the chickpeas) in that pot with boiling water we add the leek cut into thick slices and the carrots also cut into thick slices.

2 Let cook for 2 hours over low heat in a normal saucepan and about 30 minutes in a pressure cooker.

3 Once the chickpeas are cooked, add the pine nuts and let the legume cook with the pine nuts for another 10 minutes.

4 We serve in individual containers accompanied by the chickpeas with the pine nuts, the leek and the cooked carrot with the chickpeas.
