I don’t like to hear that eating legumes is boring because there are few ways to prepare them. It is normal that if we fall into the routine of traditional small and large spoon dishes, they end up not wanting to eat them (despite the fact that they are healthy, rich dishes with many benefits for our body).
Ingredients to make Chickpeas with cooked octopus:
- 1 can of Chickpeas (400 grams)
- 400 grams of tomato sauce
- 1 medium onion
- 200 grams of cooked octopus
- 1 pinch of salt
- 1 pinch of ground black pepper
- 1 teaspoon of sweet paprika
- 1 splash of extra virgin olive oil
- 1 splash of white wine
- 1 red pepper
How to make Chickpeas with cooked octopus:
1 We start this recipe for chickpeas with cooked octopus by washing the vegetables to remove the rest of the liquid that preserves them and let them drain.
Peel the onion and cut it into julienne. In a large frying pan put a good jet of olive oil and when it is hot add the onion. We poached it
Trick: If we don’t like finding pieces of onion in the chickpea stew with octopus, we can chop it instead of julienne it.
2 Wash the red pepper and cut it into strips, add it to the pan along with the onion. When the onion begins to be soft and transparent, add a splash of white wine and after a few minutes add the chickpeas. Mix well and fry.
3 Pour the tomato sauce, add ground pepper, paprika and a pinch of salt and let everything cook, stirring from time to time.
Meanwhile we split the cooked octopus (we can also buy it chopped and save this step) and add it to the chickpea stew with tomato.
Trick: If we don’t have tomato sauce we can substitute it with two or three grated ripe tomatoes.
4 We remove from the heat when the tomato sauce has reduced and we serve the boat chickpeas with octopus immediately. Bon appetite!
