Chickpeas with Cockle’s Recipe

Ingredients to make Chickpeas with cockles:

  • 400 grams chickpeas
  • 1 onion
  • 1 leek
  • 500 grams of cockles
  • 1 spring onion
  • 2 cloves of garlic
  • 1 green bell pepper
  • ½ glass of white wine
  • Water
  • Hojiblanca extra virgin olive oil
  • Salt

How to make Chickpeas with Cockles:

1 Put the chickpeas to soak the night before, remove the water and cook them in hot water in the pressure cooker. Add the leek, onion and a little salt.

2 Close the lid and cook for 10 minutes from the moment the steam starts to come out.

3 Put the wine in a pan. When hot add the cockles. Cover them and wait 2-3 minutes until they open. Remove the shells and reserve the meat on a plate.

4 Chop the onion, green pepper and garlic finely. Put them to brown in a pan with a little oil and season it. Add the cockles and sauté briefly.

5 Add the sautéed chickpeas, mix well and serve in a vegetable container.

6 Cockle meat, although not as appreciated as clam meat has a characteristic sea flavor and is also much cheaper. Try them and you won’t regret it.
