Chickpeas Stewed with Chorizo ​​and Tomato Recipe

Eating legumes every week is a healthy habit that we should all practice. In order not to fall into a routine and have the feeling that we always eat the same thing, I like to try different preparations, some lighter than others, and share them with you. This time it is the turn of some chickpeas with tomato and chorizo, which are sensational! It is not a light dish, but with the cold it is appreciated to find a hot meal on the table. If you like, we put on our aprons and start preparing this complete dish of vegetables with this simple recipe for chickpeas stewed with chorizo.

Ingredients to make Stewed Chickpeas with Chorizo ​​and Tomato:

  • 1 can of cooked chickpeas (400 grams)
  • 4 ripe tomatoes
  • 1 large onion
  • 2 pieces of sausage
  • 1 glass of white wine
  • 1 beef bouillon cube
  • 1 glass of water
  • 1 teaspoon smoked paprika
  • 1 pinch of black pepper
  • 1 pinch of minced garlic
  • 1 splash of extra virgin olive oil

How to make Stewed Chickpeas with Chorizo ​​and Tomato:

1 Peel and chop the onion. In a frying pan put a splash of olive oil, bring it to the fire and when it is hot add the onion. Stir from time to time to poach it.

2 Meanwhile, peel and slice the tomatoes. Do not make very large pieces to take less time to prepare the chickpeas with chorizo ​​recipe because we are not going to crush them later. We add them to the pan.

Tip: If you don’t want to find pieces of tomato, you can grate it or use canned crushed tomato.

3 After about 10 minutes add the paprika, pepper and garlic and stir well.

4 Add the chickpeas, the wine and the water together with the crumbled stock cube. Cover and let cook over medium-high heat, stirring from time to time and checking that the preparation does not stick.

5 When about a third of the liquid remains, chop the chorizo ​​and add it to the pan. Stir well and cook until there is practically no broth left.

6 Taste and if necessary rectify salt. We serve the stewed chickpeas with chorizo ​​and tomato very hot, and enjoy a delicious plate of vegetables!
