Chickpea with Pine Nuts Recipe

Ingredients to make Chickpeas with Pine Nuts

  • 1/2 kilo of chickpeas
  • 100 grams of pine nuts
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon of saffron tomato puree
  • Parsley
  • Oil
  • Salt

How to make chickpeas with pine nuts:

1 Cook the chickpeas soaked overnight in a saucepan covered with hot water, salt and a splash of oil.

2 Once tender, they are drained, reserving the broth, they are transferred back to a pan with the pine nuts, a sauce prepared with the onion, the garlic, a sprig of parsley (all very finely chopped) and the tomato.

3 Add a little of the reserved broth, sprinkle with toasted saffron and salt to taste and leave to cook for a quarter of an hour.

4 SERVED VERY HOT.
