Chickpea stew with vegetables recipe
Ingredients to make Chickpea Stew with Vegetables:
- 250 g chickpeas
- 1 small eggplant unit
- 100 g snow peas
- 1 unit green zucchini
- 1 unit white onion
- 4 unit red tomatoes
- 2 cloves of garlic
- Oil
- Salt
- Pepper

Soak the chickpeas the night before in water, put in the pressure cooker with 1 liter of water and cook for 40 minutes with a little salt.
Cut the zucchini into small cubes, sauté with a pinch of salt, when golden, remove from heat, set aside.
Do the same procedure with the eggplant.
Finely chop the onion and garlic, season with salt and pepper, lower the heat, cover and cook for 5 minutes until soft.
Add the tomato, peeled and cut into small cubes, cover, cook over low heat until it releases its juices.
Add the zucchini, eggplants and Chinese peas cut into strips, cook for 5 more minutes, covered over low heat. Adjust flavor with salt and pepper.
Finally mix with the chickpeas, serve and enjoy.
