Chickpea Stew Recipe

Ingredients to make Chickpea Stew:

  • 1 kilogram of potatoes
  • 1 kilogram of pork
  • 250 grams of Chickpeas
  • 1 kilogram of Cabbages
  • 2 corn pineapples
  • 1 piece of pumpkin
  • 1 Ubangi or zucchini
  • 3 onions
  • 1 head of Garlic
  • 3 Tomatoes
  • 1 sprig of thyme
  • ½ tablespoon of oregano leaves
  • 2 bay leaves

How to make Chickpea Stew:

1 The first thing we have to do to prepare this easy chickpea stew recipe is to soak the legumes overnight before preparing it if the chickpeas we have are dry, otherwise it will not be necessary.

2 The next day, put water in a cauldron, and put it over medium heat with the onion, garlic, tomatoes, a little salt, and the sprig of thyme, a little oregano and the bay leaf. The vegetables must be previously washed and/or peeled but we can leave them whole.

3 After half an hour, the chickpeas and the pork are added, together with the pineapples. We also boil the cabbages separately in a pot with water and salt and add them to the stew.

4 Subsequently, peeled and cut potatoes are added to the chickpea stew along with the bobbing, and with all this, the pumpkin with its shell is added at the end.

5 Let the chickpea stew cook a little longer until the potatoes and pumpkin are soft and  ready.
