Chickpea Salad with Avocado Recipe

We present you a healthy recipe with very fresh flavors, very simple to prepare and delicious. Chickpea salad with avocado is a spectacular invention, not for nothing but the truth is that by mixing common ingredients you can create incredible dishes like this one.

This recipe for chickpeas with avocado was born from the need to give a little life to the chickpea dish that I had to eat because of the diet, the mixture of lemon and coriander goes with everything, so the dressing was decided, but I was not sure what else I could put it on the plate to turn it into something original and more complete. Looking in the fridge I found cheese and avocado and that’s how the idea came about.

This cooked chickpea salad will not leave anyone indifferent and since it is a recipe with canned chickpeas, it will not take 5 minutes to prepare it. I am sure that next week I will prepare it again so I hope you will be encouraged to try it and tell me if you liked it. Let’s cook!

Ingredients to make Chickpea Salad with Avocado:

  • 250 grams of cooked chicken peas
  • ½ avocado
  • 1 piece of fresh cheese
  • 1 sprig of Coriander
  • ½ Lemon
  • 1 pinch of salt and pepper

How to make Avocado Chickpea Salad:

Gather all the ingredients to prepare this delicious fresh salad. We will use more or less half a can of chickpeas but if you want to make them at home.

We start by chopping the avocado into squares. Take advantage and drain the chickpeas, after washing them well.

Avocado is a super food that provides a large number of benefits to our health, which is why I always try to include it in my dishes. To give you an idea, the avocado has more than 20 vitamins and minerals, it contains monounsaturated fatty acids that are ideal for the heart and also, being delicious can help us reduce cholesterol among many other properties.

To make this chickpea salad I wanted to use white cheese, it is a Latin cheese that has a solid texture, is slightly salty and fresh, very similar to Greek feta cheese.

If you can’t find this type of cheese, you can substitute feta cheese and skip this step.  Otherwise, we lightly brown the cheese in a frying pan without oil and cut it into squares.

To dress the salad, mix some finely chopped coriander with lemon juice and sprinkle the salad with it. It will give you a spectacular fresh touch. I have already used this dressing in other dishes such as basmati rice salad.

Place everything in a bowl or a salad bowl and mix the chickpeas with the avocado and cheese. Be careful with the avocado because we don’t want it to fall apart, so stir gently.

Now all you have to do is serve and enjoy this delicious chickpea salad with avocado. As you can see, it is a simple mixture but it can help you surprise when you do not have much time to cook.
