Chickpea and vegetable soup recipe

Ingredients to make Chickpea and Vegetable Soup:

  • 500 grams of cooked chickpeas.
  • 2 slices of green onion or long onion.
  • 1 unit of large carrot.
  • 150 grams of peas.
  • 500 ml of rib or beef broth.

How to make Chickpea and Vegetable Soup:

  1. Prelist the ingredients.
  2. Bring a deep pot over medium and heat, add the rib or beef broth. Once it is boiling, add the vegetables to cook (chopped peas and carrots). Let cook for about ten or fifteen minutes.
  3. While our vegetables are cooking in the broth, bring a frying pan to medium heat, add a little oil and the green onion or finely chopped long onion, after a few minutes add the chickpeas. Sauté for a few minutes and turn off the heat.
  4. Add to our rib or beef broth what we did in step three (the fried chickpeas and green or long onion). Let cook for about 5 more minutes and turn off our soup.
  5. Serve if you like with a little parsley sprinkled on top and enjoy.
