Ingredients to make Chickpea and Pumpkin Curry:
- 500 grams of cooked chickpeas
- 400 grams of Pumpkin
- 2 cloves of garlic
- 1 pinch of salt
- 1 unit of chili pepper
- 2 tablespoons of curry powder
- 500 milliliters of water
- 1 unit of purple onion
- 1 unit of ripe tomato
- 1 splash of sunflower oil
- 15 grams of fresh ginger
How to make Pumpkin Chickpea Curry:
1 We gather all the ingredients to make the chickpea and pumpkin curry.
2 In a saucepan, fry the whole garlic cloves with the chili and chopped ginger.
3 Next, add the chopped onion and add salt. Let cook for 4 minutes.
4 Now is the time to add the curry powder. Mix well with the vegetables and cook for 2 minutes.
5 Next, add the pumpkin. Diced pumpkin and add salt. Let cook for 10 minutes. When the pumpkin is tender, add the tomato and let it fry for a little while over low heat, about 5-8 minutes.
Then add half the water and cook for another 20 minutes. We are removing from time to time.
