Chickpea and chocolate cookies recipe

Ingredients to make Chickpea and Chocolate Cookies:

  1. 1 jar of cooked chickpeas (500 g)
  2. ½ cup of peanut butter
  3. 5 dates
  4. 80 grams of dark chocolate
  5. 1 tablespoon vanilla essence
  6. 1 pinch of salt

How to make Chocolate Chickpea Cookies:

  • Soak the dates in lukewarm water for 15 minutes. Drain and chop them.
  • Drain and wash the chickpeas and put them in the blender jar.
  • Add the peanut butter, dates, salt and vanilla. Blend until a homogeneous and compact paste is formed.
  • Transfer the gluten-free chickpea cookie dough to a bowl and add the chopped dark chocolate or chocolate chips. Stir well.
  • Take portions of dough with your hands and form some balls. Crush them giving them the shape of cookies.
  • Preheat the oven to 180 degrees and cover a baking tray with baking paper. Place the vegan chickpea cookies on top and bake for 25-30 minutes. Remove the tray from the oven and allow the cookies to cool completely.
  • Tip: While the cookies are hot, they will be very soft, so it is important that they cool completely.
  • Serve the chickpea and chocolate cookies as a snack or as a snack between meals
