Ingredients to make Chickpea and Chocolate Cookies:
- 1 jar of cooked chickpeas (500 g)
- ½ cup of peanut butter
- 5 dates
- 80 grams of dark chocolate
- 1 tablespoon vanilla essence
- 1 pinch of salt
How to make Chocolate Chickpea Cookies:
- Soak the dates in lukewarm water for 15 minutes. Drain and chop them.
- Drain and wash the chickpeas and put them in the blender jar.
- Add the peanut butter, dates, salt and vanilla. Blend until a homogeneous and compact paste is formed.
- Transfer the gluten-free chickpea cookie dough to a bowl and add the chopped dark chocolate or chocolate chips. Stir well.
- Take portions of dough with your hands and form some balls. Crush them giving them the shape of cookies.
- Preheat the oven to 180 degrees and cover a baking tray with baking paper. Place the vegan chickpea cookies on top and bake for 25-30 minutes. Remove the tray from the oven and allow the cookies to cool completely.
- Tip: While the cookies are hot, they will be very soft, so it is important that they cool completely.
- Serve the chickpea and chocolate cookies as a snack or as a snack between meals
