Chicken soup with vegetables recipe

Ingredients to make Chicken Vegetable Soup:

  • 2 units of chicken thigh
  • 2 units of Zucchini
  • 2 units of Carrot
  • 2 units of Potato
  • 1 unit of Onion
  • 1 unit of celery stalk
  • 1 branch of chard
  • 2 liters of water
  • 1 pinch of salt
  • 2 units of concentrated broth tablet

How to make Chicken Vegetable Soup:

1.To make this vegetable soup with chicken, the first thing you should do is clean the chicken. Remove the skin from the thighs and reserve.

Trick: We have used chicken thighs because they are the ones that provide the most flavor, but if you prefer you can use any other piece of chicken you have.

2.Prepare all the vegetables. To do this, wash and chop the zucchini, celery and chard. Peel the carrot, potatoes and onion. This soup will be mashed, like a vegetable soup for children, but if you prefer to feel the pieces of vegetables, you can cut them to your liking.

3.Then fill an express or pressure cooker with enough water to cover all the vegetables and start cooking over high heat. Add the chicken and carrots first.

4.After about 3-5 minutes, add the leek and chard to the pot. Wait another 3-5 minutes.

5.After this time, add the rest of the vegetables along with the concentrated broth tablets and cover the pot. Cook all the vegetables over high heat for about 10-15 minutes or until the pot starts to beep.

Tip: If you cook the vegetable opal in a traditional pot you will only have to prolong the cooking time until everything is soft.

6.When finished, open the pot and lower the heat to a minimum. Check that all the vegetables are tender and the chicken is well cooked.

8.Return the cream of crushed vegetables to the pot and once you check and correct the seasoning, continue cooking over medium-high heat for about 7-10 more minutes.

Tip: You can add some pasta in this step to make a vegetable and chicken noodle soup.

9.Meanwhile, when the thighs have cooled down a bit, shred the chicken, removing all the meat from the bone.
