Chicken Soup Recipe

When the temperature drops, it provokes us to have a soup to warm up. This chicken soup recipe is delicious, economical and simple. You don’t need much culinary knowledge to make it, and you only need chicken meat, although it can also be made with beef.

As its name says, it can be made in just a few minutes. Like all Peruvian dishes, it is necessary to make a dressing with onion, garlic and chili. According to history, it is believed that the soup a la minuta is due to the Italian influence in Peru. For this reason, angel hair noodles are used and it is accompanied with toasted bread. On some occasions, it is also accompanied with finely grated Parmesan cheese

Ingredients to make chicken minute soup:

  • 1 boneless chicken breast
  • 1½ liters of chicken stock or water
  • 1 large red onion
  • 1 tablespoon minced garlic
  • 1 tablespoon of ají panca paste
  • 3 medium tomatoes
  • 1 splash of evaporated milk
  • 125 grams of angel hair
  • 1 pinch of dried oregano

How to make chicken minute soup:

  1. To start with the soup a la minute, finely chop the onion and set it aside.
  2. With the help of a knife, make a cut in the lower part of the tomatoes.
  3. Pass the tomatoes for 30 seconds in boiling water. Then, place them in ice water and remove the skin.
  4. Cut the tomatoes into small squares and remove the seeds.
  5. Now cut the chicken breast into medium squares.
  6. In a medium saucepan place oil, add the chopped chicken and seal over medium heat. Reserve the chicken while you continue with the rest of the preparation of the chicken soup a la minute.
  7. In the same pot add the chopped onion. Cook for 3 minutes.
  8. Tip: add a pinch of salt so that the onion can be dehydrated.
  9. Add the ají panca paste and minced garlic. Let cook for 3 to 4 minutes over low heat.
  10. Stir the diced tomato and tomato paste into the dressing. Cook for 4 to 5 minutes.
  11. Now, also add the already sealed chicken and stir with the rest of the ingredients.
  12. Trick: Add about 2 tablespoons of stock
  13. Add the chicken stock or water and move with the help of a spoon. Cover and let cook for 15 minutes. During cooking, do not forget the pinch of oregano and seasoning.
  14. Add the angel hair noodles. Cook for 5 to 6 minutes and turn off the heat.
  15. Add a splash of milk to the soup at the minute.
  16. Serve the chicken soup a la minute hot with toasted bread and grated Parmesan cheese. To enjoy!
