The combination of rice, chicken and vegetables is perfect and low in calories, since we will use chicken breast and cook it with very little oil. Ingredients to make Chicken Rice Salad:
- 200 grams of chicken breast
- 1 cup of cooked white rice
- 80 grams of carrot
- 80 grams of cucumber
- 80 grams of peas
- 1 lemon
- 1 pinch of chicken seasoning
- 1 pinch of salt
- 1 pinch of pepper
- 1 splash of olive oil
How to make Chicken Rice Salad:
Before making this recipe, the first step is to get all the ingredients ready. To do this, you must cook the rice in advance, taking into account that the proportion is: for one part of rice, two of water. And if you’re using brown rice, you’ll need to use three parts water for every one part rice.
In a pot with boiling water and salt, cook the carrot cut into small cubes and the peas for 10 minutes. Then drain them and reserve them.
Mix the cooked vegetables with the cucumber, without seeds and cut into cubes, and the well-drained rice. Also add a little lemon juice and a splash of olive oil, salt and pepper.
Separately, in a frying pan or griddle with a little hot oil, cook the chicken for 15 minutes over medium heat, season with salt and pepper and add the chicken seasoning. You can also make the Roast Chicken Rice Salad by cooking the chicken breasts in the oven.
Tip: the chicken seasoning is a mixture of spices that is marketed like this, but if you can’t find it, you can mix the aromatic spices that you like, such as oregano, ginger, garlic, curry, rosemary…
