• 1 bay leaf

• 1 pinch of Cinnamon

• 1 pinch of Nutmeg

• 1 unit of cloves

• 1 pinch of salt

• 1 pinch of pepper

How to make chicken pate with Thermomix:

The first step to prepare this pâté with thermomix will be to marinate the chicken livers with brandy and a few crushed green peppercorns. Let macerate for at least two hours, you can also leave it overnight. Separately, add the oil, butter, onion, bacon, bay leaf, and a pinch of salt and pepper to the glass. Mix programming the thermomix at 100º for 3 minutes at speed 3. After 3 minutes, add the ham, the previously drained livers, the cream, the sugar, the cinnamon, the nutmeg and 2 teaspoons of new brandy to the mixture. Beat everything together programming the thermomix for 30 seconds at speed 5-7-9 without temperature. Go increasing the speed progressively.

When everything has been mixed, help yourself with a spatula and clean the edges and the lid of the glass, lower the mixture that has remained adhered to the walls. Then, program for 6 minutes with speed 4 at 80º temperature. If you want the chicken liver pâté to be lighter in color, blend the ingredients for a few more minutes. Let cool to set and serve garnished with fresh parsley. Chicken liver pâté usually combines very well with sweet flavors such as jams, we recommend trying a tomato one. If you liked this recipe, try making other pâtés with a thermomix, such as the mushroom pâté or the black olive pâté.
