Quiche are dishes that we can prepare in a very short time and in an easy and economical way. It is always the same technique, which consists of lining a mold with short crust pastry and putting it in the oven for a few minutes to form a shell that we will later fill with the ingredients, which will ultimately make up our salty cake. The texture and appearance of our quiche will depend on the ingredients and their quantities. Ingredients to make Chicken, Mushroom and Cheese Quiche:
• 1 sheet of short crust pastry
• 1 chicken breast
• 150 grams of mushrooms
• 200 grams of cheddar cheese
• 3 eggs
• 200 milliliters of milk
• 200 milliliters of liquid cream or heavy cream
• 2 tablespoons of butter
• ½ teaspoon ground black pepper
• 1 onion
• ½ teaspoon of salt
• 500 grams of dried legumes (to use as a counterweight)
How to make Chicken, Mushroom and Cheese Quiche:
Preheat the oven to 180ºC and prepare a mold by smearing it with half the butter (I use spray). Now we put the broken dough so that the mold is lined inside; Prick the base using a fork and cover with a circle of parchment paper. Fill with the dried legumes and put it in the oven for about 15 minutes.
Pour the rest of the butter into a frying pan and, when it is melted, fry the finely chopped onion, add the chicken cut into small cubes and brown it. Add the mushrooms to the pan and cook over low heat until tender, remove from the heat and set aside.
In a bowl, beat the eggs with the milk and liquid cream. When everything is well beaten, add the diced cheddar cheese, the reserved chicken and mushrooms, season with salt and pepper and mix everything well. Remove the legumes and parchment paper from the mold and pour the filling that we have prepared. We put the salty cake in the oven and keep it for 45 minutes, or until we check that it is cooked by pricking it with a skewer and that it comes out clean.
