• 300 grams of cornmeal (2½ cups)
• 1 pinch of salt
• 1½ cups warm water
• 1 cup of chopped cooked nopales
• 1 cup of refried beans
• 300 grams of chicken breast cut into cubes
• 1 pinch of salt and pepper to taste
• ½ onion, chopped
• 1 chopped tomato
• 1 Serrano chili chopped
• 1 splash of vegetable oil
• 1 handful of grated cheese to taste
How to make Chicken Huaraches:
Begin the chicken huaraches recipe by preparing the dough, mixing the cornmeal with a pinch of salt and 1 cup of warm water to form a dough. The dough should be soft and slightly moist.
Take a portion of dough of about 50 grams, roll it up and, with the help of a rolling pin, roll it out until it is about 5 mm thick and has taken an oval shape.
On a hot griddle, place the huarache and cook each side for 2 to 3 minutes or until lightly toasted.
For the stew with chicken, in a pot with a little oil, sauté the chopped onion and tomato. Then add the diced chicken followed by the chopped Serrano pepper and cook for about 8 minutes or until the chicken is cooked through.
