Chicken Green Pozole Recipe

Ingredients to make Green Chicken Pozole:

  • 1 bag of corn for pozole
  • 1 cooked and shredded chicken breast
  • 3 lettuce leaves
  • 1 bunch of coriander (small)
  • 1 bunch of parsley (small)
  • 1 bunch of epazote (small)
  • 1 bunch of chives (small)
  • 1 poblano pepper without seeds or veins
  • ½ kilogram of green tomatoes
  • 4 serrano peppers (optional)
  • 100 grams of pumpkin seeds
  • 100 grams of sesame
  • 50 grams of peanut
  • 1 medium onion
  • 1 teaspoon of oregano
  • 5 cups of chicken broth
  • 1 pinch of salt and pepper to taste

How to make Green Chicken Pozole:

1.To start preparing the green chicken pozole recipe, wash the vegetables very well, that is, the lettuce, the cilantro, the parsley, the epazote, the chives, the poblano pepper, the green tomatoes and the serrano peppers (if not you want it spicy, you can omit this ingredient or increase the amount of chili to your liking if you are looking for a more spicy result). When you have these ingredients ready, crush them with a clove of garlic and a piece of onion. Once blended, reserve the mixture.

2.To cook the pozole corn, rinse the corn very well until the water runs clear. Then, grind a piece of onion and a teaspoon of oregano in the blender. Take a pressure cooker and pour a little water, add the corn and the mixture that you blended and cook everything together for about 15 to 20 minutes. Reserve the preparation.

Trick: If you don’t have a pressure cooker you can do it in a normal pot until the corn is soft.

3.Toast the sesame seeds in a frying pan over a very low heat, along with the pumpkin seeds and peanuts for 5-6 minutes, stirring constantly to prevent them from burning.

4.Blend the previous ingredients with 2 cups of chicken broth, then pour the mixture into a large pot and cook it for a few minutes over low heat. The original green pozole recipe has several steps, but you will see that the result is worth it.

5.Pour the green mixture into the pot where you have the seeds, the sesame seeds and the blended peanuts, season and cook until it boils.

6.Add the hominy corn, 3 cups of chicken broth and the shredded chicken breast, mix until all the green pozole ingredients are incorporated and cook for 20 minutes.

Tip: You can taste and season if necessary.

7.Serve and accompany the green chicken pozole recipe with a little lettuce, radish, chopped onion, a pinch of oregano and a few drops of lemon. Now you can enjoy this rich green pozole
