- A large non-curly endive.

How to make chicken garlic escarole soup:
- Clean and cut the escarole into small pieces, giving it two washes in cold water. Drain and put in a saucepan.
- Cook in plenty of water, when it is cooked, drain and leave it in the saucepan.
- Separately, fry the bread, the garlic and the pepper (taking care not to burn it) and mash in the mortar with fried almonds and a little salt.
- This mash is poured over the escarole, frying it so that it takes on the flavor, add a liter and a half of water and let it cook a little with the mash.
- We rectify salt if necessary and it is ready to eat. (Typical Granada food).
