Chicken Garlic Endive Soup Recipe

Ingredients to make chicken garlic escarole soup:

  • A large non-curly endive.
  • A piece of bread of about 50 grams.
  • 4 cloves of garlic.
  • a piece of dried pepper
  • a handful of fried almonds.
  • Salt
  • Water

How to make chicken garlic escarole soup:

  1. Clean and cut the escarole into small pieces, giving it two washes in cold water. Drain and put in a saucepan.
  2. Cook in plenty of water, when it is cooked, drain and leave it in the saucepan.
  3. Separately, fry the bread, the garlic and the pepper (taking care not to burn it) and mash in the mortar with fried almonds and a little salt.
  4. This mash is poured over the escarole, frying it so that it takes on the flavor, add a liter and a half of water and let it cook a little with the mash.
  5. We rectify salt if necessary and it is ready to eat. (Typical Granada food).
